Are you affected by Gluten? Think about how you feel after eating a sandwich or a pasta meal? Gluten is a composite protein predominantly found in wheat and is also present in rye, barley and oats. Since most of the western diet is based on these grains it’s worth taking note how your body responds to them. You don’t have to be celiac to be sensitive to these grains, research is finally catching up and we are seeing that testing for celiac is the end result of an already damaged gut. You need to catch it well before then and sadly the celiac test does not allow for this. You can have what is termed non-celiac gluten sensitivity (NCGS).
Gluten may cause a multitude of symptoms not just simply bloating you up but restless legs, osteoporosis, muscle aches and pains and Meniere’s disease are linked to name but a few. A pioneer in this field is Dr Tom who talks avidly about the the way it causes multiple symptoms in our body, difficulties in current testing methods and what to do about it. However, the simplest way to start is to eliminate all gluten foods (bread, pasta, pizza, cakes, biscuits) or opt for gluten free ones instead, for a week and and see if your symptoms improve.
It’s not all doom and gloom when you have to give up these grains. There are many alternatives around, much more so now than when I started out some twenty years ago. There are numerous recipes on my website too and I often recommend the Doves brand flour for baking. I’m not a huge baker but was inspired by this Orange and Almond cake.
